Time:             Competition will begin at 6:00

                        Pittsburgh, PA 15233

This will be a live action knife cutting competition.  Competitors must bring their own knives. Product and cutting boards will be provided.

Because of the nature of this competition it must be limited to 16 contestants.

Each contestant will receive 5 potatoes.
Contestants will have 30 minutes to peel the potatoes and produce:   
                                    Brunoise potatoes, 2 oz. 1/8” x 1/8” x 1/8”
                                    Julienne potatoes, 2 oz.  1/8” x 1/8” x 2”
                                    Small diced potatoes, 2 oz.  1/4” x 1/4 “ x 1/4”
                                    Batonnet potatoes, 2 oz.   1/4” x 1/4” x 2”
                                    Tourne potatoes, 4 tourne  7 sides 3/4” x 2”

Senior members of the Pittsburgh Chapter of the ACF will judge the knife cuts based on accuracy, consistency and yield, along with technique, sanitation and organization.
